2019 Cabernet Sauvignon, Allegretto Vineyard
This newly released estate Cabernet Sauvignon comes from our estate Allegretto Vineyard planted on our resort property, in the PASO ROBLES, ESTRELLA DISTRICT, which is comprised of deep alluvial soil like that of Napa Valley. So how does this influence the wine? We describe this as a classic valley floor, rich, deep, earthy rendition. This varietal and these soil types form a perfect union, giving us the familiar and highly prized classic aromas of cassis, dark berries, and freshly turned soil. This 2019 vintage is ready to enjoy now with its bold fruit forward flavors, or set a few bottles aside for further development. Tasting the wine now, there is no mistaking that this is king Cabernet, from a great vintage grown in a proven place. Overall, this full-bodied beauty hits the mark with rich and decadent flavors of mixed berries compote, cedar, and just the right amount of new oak (10% from fine toasted French barrels). Enjoy now through 2029.
Try this! We suggest acquiring both of our two estate Cabernet Sauvignons, from each of our vineyards: Allegretto Vineyard and Willow Creek Vineyard, and enjoy them in a side by side tasting comparison. This provides for a wonderful and entertaining experience at your next dinner party or celebration. It is a great treat to really impress yourself or another wine aficionado with an in-depth study on two of the eleven Paso Robles AVA’s.
